Fresh

Took me a while to find something to cook the other night.  I flicked through a few books, realised I’ve still got quite a bit of work to do, and settled on Fresh.

Fresh – The Seasonal Produce Cookbook is a compilation of the best recipes from 6 years of the Seasonal Produce Diary by Allan Campion and Michele Curtis.  Lots of tasty non complicated food.

I was thinking something with cauliflower but the first thing that caught my eye was creamy pasta sauce with smoked chicken and broccoli.  A very simple recipe that was a crowd pleaser at our house.

40ml olive oil
1 onion, diced
1 garlic clove, crushed
250ml cream
1 smoked chicken breast fillet
200g broccoli, cut into 2cm pieces
black pepper
2 tbsp chopped parsley

Heat oil in pan and fry onion for 5 mins until softened.  Add garlic and cook briefly.  Add cream, bring to boil, reduce and simmer for 5 mins.  Remove skin from chicken and slice thinly.  When cream has reduced by half and chicken and heat through.  Add broccoli, turn up heat and cook for 2 mins, stirring often.  Check seasoning and add parsley.  Toss with cooked linguini.
