The Return of the Naked Chef is the fourth and last of Jamie Oliver’s books that I have looked at this year. Again this is a good little book, the second one he ever published and there is a great fish pie recipe in this book that we cook quite a bit.
Risotto of radicchio, smoky bacon, rosemary and red wine is a great combination of flavours, but then again, it is hard to go wrong with anything that has bacon in it.
This recipe starts with Jamie’s basic risotto recipe, but instead of white wine, add 3 glasses of red wine. While adding the stock to the rice, add 10 rashers of bacon, slice and fried, 2 heads radicchio, sliced and wilted and a handful of rosemary.
