Chicken Casserole

Had to make a quick and late decision for a recipe for Bastille Day.  Went with a simple chicken casserole from I Know How To Cook.  This is Phaidon’s French tome and I only picked it up because it was cheap and because I have some sort of obsession of picking up all their books.

40g butter
125g streaky bacon, diced
60g onion, chopped
1 1kg chicken (I used a larger one, 1.6)
100ml white wine
salt and pepper
125g mushrooms, chopped

Heat butter in casserole and cook bacon and onions until browned.  Remove and set aside.  Add chicken and brown on all sides.  Return bacon and onion and add wine.  Season.  Cover with a tight fitting lid and cook in 200C oven for 40 mins.  Add mushrooms and cook for a further 20 mins.

Served this with brocollini and mashed potato.  A good, relatively quick and easy recipe.  And look, no bowl!

  1. I have just bought a new Emile Henry casserole pot (I am currently obsessed with them) which would be perfect for this recipe! Oooh, and I have a few bottles of white that need using up too! 🙂
