A couple of Vegetarian Soups

Doing quite a few soups at the moment and last week cooked two from Vegetarian by Alice Hart, a beaut little book that is relatively new to our household. 

First up was Butter bean and celeriac veloute with charmoula.  A good soup and easy to make.

1 celeriac, about 500g, cubed
a squeeze of lemon
2 celery sticks, finely chopped
1 onion, finely chopped
2 garlic cloves, chopped
2 tbsp olive oil
300g cooked butter beans
1/2 tsp salt
2 tbsp creme fraiche
4 tbsp charmoula dressing

Drop cubed celeriac into bowl of cold water with squeeze of lemon juice.  Cook celery, onion and garlic in olive oil for 10 mins.  Add drained celeriac and cook for a further 5 mins.  Add butter beans, 800ml water and salt.  Simmer for 20 mins.  Blend with creme fraiche and serve with charmoula dressing.

Next up was Smoky black bean and roast tomato soup.  I’m really loving chipotle chilli at the moment and this soup featured it.  First a salsa was made.

1 small red onion, very finely chopped
1 tbsp sunflower oil
100g sweetcorn kernels
1 red chilli, deseeded and finely chopped
a squeeze of lime
1 small bunch of coriander, leaves only

Cook the red onion gently in sunflower oil for 5 mins.  Turn up heat and add corn and chilli.  When corn is lightly toasted, remove from heat and add lime juice and seasoning to taste.

Then the soup.

1 tbsp sunflower oil
2 red onions, chopped
3 garlic cloves, finely chopped
2 tsp chipotle pepper paste
1 tsp dried oregano
1 tbsp cumin seeds
12 roast tomato halves
700g cooked black beans
750ml vegetable stock
a squeeze of lime
sour cream to serve

Cook onion in oil gently until translucent.  Add garlic, chipotle, oregano and cumin and cook for 5 mins.   Add tomatoes, beans and stock  and simmer for 30 mins.  Season to taste and add lime juice.  Blend and serve with salsa, coriander and sour cream.  Delicious and great presentation!

    Sure is, seems most things I am cooking are served in a bowl these days – need to diversify a bit. It is a yummy soup with a bit of smoky heat.
