Xmas in July – Gravlaks

Gravlaks had previously been introduced to me by a Norwegian friend and she taught me how to make it.  The recipe from Culinaria – European Specialties differs in that it uses less sugar and salt.  I couldn’t quite come at that so I sort of split the difference.  Gravlaks is essentially fresh salmon cured in a dill, sugar and salt mix for 3 days.  You rub the mix into 2 sides of salmon, wrap back up together in plastic wrap and put in fridge, weighed down and turning twice a day.  Once finished, clean off dill and spice mix and serve.  The result was quite delicate and tasty. 

I also had a crack at the mustard sauce, but I don’t think I got that quite thick enough.  The recipe for the sauce simply to mix together:

6 egg yolks
1 tbs oil
1 tbs sugar
1/2 tbs vinegar
2 tsp white pepper
2 tsp salt
1 tbs mustard
2 tbs finely chopped dill
