Quick, easy and practical tonight. Trying to make sure things don’t stay in the freezer too long, so got out some lamb chops this morning. Found a quick and easy recipe in Patricia Well’s at home in Provence. The marinade is:
3tbsp lemon juice
3tbsp extra virgin olive oil
1tsp fresh thyme leaves (I chopped mine up)
Salt and Pepper
Rub into 8 lamb chops and leave for 20mins before pan frying on a hot dry pan. Served with a ‘whats in the kitchen’ salad of lettuce, tomato, capsicum and feta with dressing left over from last night.
