Pho

I watched only half an episode of Ric Stein’s Far Eastern Odyssey but it was during that episode that I discovered Pho.  Pho is Vietnamese beef noodle soup and the dish is one of that country’s best loved dishes.  So it was off to Victoria St to find some.  Not bad, but one day I would have to make my own.  That day has come.

Secrets of the Red Lantern, part cookbook, part incredibly interesting family history was the source of my recipe and can be found here  This recipe takes a bit of time and on a cold wintry day fills the kitchen with a wonderful aroma. I think I need to have another go at this though.  The stock turned out a bit fatty.  I guess when the instructions say scrub the bones well, they mean scrub the bones well!

  1. Sheesh Dave, did you do the boiling overnight bit? I love pho, but just don’t have the energy to try to make my own, especially when it’s soooo good here in Sydney for $9/bowl!

      Well almost, eldest got home a little after 1am on Sat night and decided that irresponsible parents had left the cook top on, so he turned it off. I turned it back on 3 hours later.
